Comments from Happy No Fret Cooks

One of my goals for NFC was to bring awareness for healthier ways of cooking, and have my recipes serve as a foundation. With that in mind, I encourage and envision cooks exploring at times with other ingredients to match their personal preferences and also be mindful in using ingredients they have on hand.

As we continue to receive comments from happy No Fret cooks, I’m sharing a few with you today.

Love the butternut squash molasses muffins! One day I made a green juice drink and thought I’d like to try using the pulp from the juice in place of the squash. I added some apple juice to lend a bit more moisture to the muffins and was surprised how delicious they were!

Upon hearing this, I also decided to use the pulp from my latest green drink which included: 4 large kale leaves, 2 stalks celery, 5 carrots, and 2 apples. I substituted the amount of pulp for the squash and to show the versatility of the recipe I used I/2 cup coconut milk instead of apple juice as mixture needed a bit more moisture. I also substituted almond meal/flour to recipe was gluten-free. The changes resulted in a delicious, healthy, and hearty muffin that was a bit crumbly. I think next time I’ll add an extra egg and see which way I prefer.

Our daughter recently started cooking gluten-free, so we gifted her a copy. She found the book easy to use and is enjoying the recipes.

As I cooked recipes from the cookbook for a dinner party, I enjoyed listening to the music and when I served the food for my guests I played the CD Music to Dine By. Everyone loved the concept of pairing food and music and wanted to know where they could get a copy!

I love the gazpacho, its flavor, and all the fresh ingredients! I’ve started making it in large batches to share with friends and when they come to visit they ask if I have any.
